Onions are vegetables that are grown and consumed around the world.  They have a mild, sweet, strong or sharp flavor.  They are low in calories, (approx. 28 for a small onion), carbohydrates, fat, cholesterol and sodium.  They are rich in vitamins A, B, C and E.  They are rich in sulphur, fiber, calcium, copper, iron, folate, potassium and manganese. They are a good source of polyphenols, phytochemicals and flavonoids. They are especially rich in quercetin, a plant pigment (flavonoid), also found in red wine, green tea, apples and berries.

CAUTION!  Guard against your intake of onions.  Consuming large amounts can produce side effects:  heartburn, bad breath, decrease in blood sugar and other effects.  Pregnant/nursing women should avoid intake of onions.

CAUTION!  Topical use of onion or onion juice may cause skin irritations.  Discontinue use if itching, burning, redness, inflammation or any other skin irritation occurs.  Check topical lotions, creams, shampoos, soaps for onion juice as an ingredient.

Onions are one of many antioxidant foods.  They have anti-bacterial, anti-septic and anti-inflammatory properties.

Purchase fresh onions that are clean, firm, dry, nicely shaped with a shiny outer skin.  (I like organic onions).  Store onions in a cool, dry, location.  Store partial strips or bits of onions in a tight sealed container, refrigerate and use within a few days.  Refrigerated onions can turn soft. Inspect onions regularly.  Discard discolored, moldy, soft or slimy onions.
