The main ingredient in dark chocolate are cacao beans, the seeds of the Theobroma cacao tree. The seeds are dried and processed to produce chocolate. The names cacao and cocoa are interchangeable. Look for organic, non-GMO, dark chocolate with about 70% or more cacao without added fat and sugar. Try finding dark chocolate that is not processed with alkali. Cocoa processed with alkali is called “dutched” cocoa. It is not unsafe but it offers less health benefits than pure cacao. Avoid chocolate with added fillings, packed with sugar and hydrogenated oils. A nibble of pure dark chocolate, everyday, is satisfactory. One to two ounces, per day, is enough for maximum consumption.

It’s diluted with milk solids, cream, sugar and other additives. White chocolate is made from cocoa butter, with no cacao bean solids. Vanilla or other flavorings may be added. It lacks the antioxidant properties offered by pure dark chocolate.
